The farfalle have a pleasant taste of fish and are therefore excellent with all kinds of fish dishes.
In the highlands of “Murgia” and the plains of “Apulia” the raw materials are cultivated and processed into the best “Farfalle al Nero di Seppia”.
The local wheat is in no way treated with pesticides.
The pressing is done in bronze and the drying is done slowly at a temperature of 37/38 degrees. This results in this wonderful pasta with its rough surface which almost maintains its protein content during cooking and increases in volume.
