Our “Pappardelle all’uovo” are very wide and long ribbon noodles, which are processed into beautiful nests. The width of the noodles offers a large surface for a hearty sauce and is suitable as a decorative side dish with meat or fish.
Consisting of high-quality durum wheat semolina from Italy, the pasta nests are characterised by their fine taste and short cooking time.
The durum wheat semolina is made into a smooth dough with fresh eggs without the addition of water. This is pressed through bronze dies, which give them their shape and create the rough surface. The nests are then dried at a low temperature for at least 18 hours. This type of pasta and its production is typical of the “Marche” region of Italy.
