Risotto al “Tartufo”

Ingredients: Carnaroli rice 94%, vegetable broth: (salt, vegetable broth extract, rice flour, dehydrated vegetables (onion, carrot, tomato, leek), herbs, spices), onion, truffle (Tuber Aestivum) 0,3%, herbs, aroma.

Preparation: In a pan, with a little olive oil add an onion and a clove of garlic. Cook on a low flame for one minute then add 200g of rice and gently stir until all the grains are coated in oil. Let it rest for a two minutes then add ½ glass of white wine and cook gently until the wine has been absorbed. Add 700 ml of vegetable stock and stir until all the liquid has been absorbed. Add some grated Parmesan and a knob of butter.
